Vegan on the Run

As a college student, I find myself perpetually on the go. Here's a handful of my favorite quick, budget-friendly recipes that keep me going through the week (and through the weekend as well!).


Pita with Dueling Spreads

1 whole wheat pita
2-3 T Avocado Spread (recipe found here)
2-3 T Sundried Tomato Hummus
1/2 cup raw vegetables (I used mushroom, pepper, and tomato)


Spread one half of the pita with the avocado spread and the other half with the hummus. Top with vegetables, fold, and enjoy.












Happy Vegan Bowl

1 bag of bib lettuce
1/4 cup dried cranberries
1/4 cup walnuts
1 small apple, sliced
2 baby portabella mushrooms
1-2 oz tofu, pressed between a paper towel and cubed
3-4 strawberries, sliced
1 T balsamic vinegar











 


Dump all ingredients into a large bowl and drizzle with vinegar. This is a great lunch to take into work, to school, or in a hurry before you head out the door.


Yield: One salad
